What to look for
Long, deep-red threads with little yellow, and a sweet, honeyed smell.
Steep it first
Soak threads in warm milk or water for ten minutes before adding them to a dish; the colour spreads evenly.
How much
A pinch of 15-20 threads colours a biryani for four to six, or a litre of kheer.
